Prepare the Garlic

Preheat your oven to 200°C (400°F). Take the garlic cloves, peel them, and wrap them in aluminum foil with a drizzle of olive oil. Roast in the oven for about 20-25 minutes until soft and fragrant.

Roast the Mushrooms

While the garlic is roasting, clean the mushrooms and slice them if they are large. In a large bowl, toss the mushrooms with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast in the oven for about 15-20 minutes until they are golden and caramelized.

Make the Garlic Aioli

Once the garlic is roasted and cooled, squeeze the cloves out of their skins into a bowl. Combine with the black garlic aioli in a food processor and blend until smooth. Adjust seasoning if needed.

Assemble the Dish

In a serving dish, layer the roasted mushrooms, sprinkle the shredded mozzarella and grated parmesan over the top. Add the pickled onions. Drizzle the black garlic aioli over the top before serving.
