Make the Biscuits
1. Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, baking soda, and salt. 2. Cut in the butter until the mixture resembles coarse crumbs. 3. Stir in the buttermilk until just combined. 4. Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick rectangle, then cut out biscuits using a round cutter. 5. Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Make the Gravy
1. In a skillet over medium heat, cook the ground sausage until browned and crumbly. 2. Sprinkle the flour over the sausage and stir to combine, cooking for about 1 minute. 3. Gradually whisk in the milk, stirring constantly until the mixture thickens. 4. Season with salt, black pepper, and red pepper flakes. Let it simmer for a few minutes.
Serve
1. Split the warm biscuits in half and ladle the sausage gravy over the top. Serve immediately.
