Flatbread Dough
1. Make the dough
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of instant yeast. Stir to combine.
2. Add 3/4 cup of warm water and 1 tablespoon of olive oil to the dry ingredients. Mix until a rough dough forms.
3. Knead the dough on a floured surface for about 8–10 minutes, or until smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
5. Once risen, punch down the dough and roll it out into a thin oval or rectangle, about 1/4-inch thick, on a floured surface.
Flatbread Assembly & Toppings
6. Preheat oven
Preheat your oven to 450°F (230°C) and place a baking sheet or pizza stone inside to heat.
7. Prepare toppings
Slice 1/2 cup of dried figs into thin strips or small chunks. Crumble 1/3 cup of blue cheese and finely chop a tablespoon of fresh rosemary or thyme (or your herb of choice).
8. Drizzle the rolled-out flatbread dough with 1 tablespoon of olive oil.
9. Evenly distribute the sliced figs and crumbled blue cheese over the oiled dough.
10. Sprinkle the chopped fresh herbs on top for added flavor and freshness.

Carefully transfer the assembled flatbread onto the preheated baking sheet or pizza stone. Bake for 12–15 minutes or until the crust is golden and crisp and the cheese is bubbly and lightly browned.
