Making the Pretzel

    Prepare the Dough

    In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Gradually add the flour and salt, mixing until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzel

    Preheat your oven to 425°F (220°C). Punch down the risen dough and divide it into two equal pieces. Roll each piece into a long rope (about 24 inches long) and shape it into a pretzel.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully lower each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Egg Wash and Bake

    Beat the egg and brush it over each pretzel. Sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.
