    Preparing the Steaks

    Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

    Seasoning

    Pat the steaks dry with paper towels. Rub each steak with olive oil, and season generously with salt and black pepper on both sides.

    Preheating the Pan

    Heat a cast-iron skillet or heavy pan over medium-high heat until it's very hot. You can test the heat by sprinkling a few drops of water on the pan; they should sizzle and evaporate immediately.

    Cooking the Steaks

    Add the steaks to the hot skillet and sear for about 4-5 minutes on one side without moving them. Flip the steaks and add the garlic cloves, rosemary, and butter to the pan.

    Basting the Steaks

    Using a spoon, baste the steaks with the melted butter and pan juices. Continue cooking for another 4-5 minutes for medium-rare, or until your desired doneness is reached.

    Remove the steaks from the skillet and let them rest on a cutting board for about 5-10 minutes before slicing. This allows the juices to redistribute.
