    Make the Bacon Jam

    In a large skillet over medium heat, cook the bacon until crispy. Remove bacon and drain on paper towels, leaving 2 tablespoons of bacon fat in the skillet. Add diced onion and cook until softened, about 5 minutes. Stir in brown sugar, apple cider vinegar, brewed coffee, and black pepper. Chop the bacon and add it back to the skillet. Cook on low heat, stirring occasionally, until the mixture thickens and resembles a jam, about 20-25 minutes. Let cool.

    Cook the Burgers

    Form the ground beef into 4 equal patties and season with salt and pepper. Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of white cheddar on each patty and cover to melt.

    Assemble the Burgers

    Toast the burger buns if desired. Place a beef patty with melted cheese on the bottom half of each bun. Top with a generous scoop of bacon jam and a handful of arugula. Cover with the top half of the bun and serve immediately.
