    Prepare the Walnut Pesto

    In a food processor, combine walnuts, fresh basil, garlic, and salt. Pulse until finely chopped. With the processor running, gradually add olive oil until the mixture is smooth. Set aside.

    Prepare the Chicken and Vegetables

    Shred the wood-roasted chicken into bite-sized pieces. Slice the fennel bulb thinly and chop the spinach. In a large bowl, combine the chicken, fennel, diced tomatoes, and spinach. Season with salt and black pepper.

    Assemble the Dish

    Preheat your oven to 375°F (190°C). In a baking dish, spread half of the walnut pesto evenly on the bottom. Layer the chicken and vegetable mixture on top, then drizzle the remaining pesto over the top.

    Add Cheese and Bake

    Sprinkle mozzarella and gorgonzola cheese evenly over the top. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
