    Prepare the Asparagus

    Trim the ends of the asparagus and blanch them in boiling salted water for 2-3 minutes until bright green. Drain and set aside.

    Cook the Filets

    Season the petite filets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filets for 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest.

    Prepare the King Crab

    If using precooked king crab legs, simply heat them in a steamer or microwave until warmed through. If raw, cook in boiling water for 5-7 minutes until fully cooked, then crack and prepare for serving.

    Plate the Dish

    On each plate, place the filet, top with a generous portion of king crab, and arrange the asparagus on the side. Drizzle with béarnaise sauce and garnish with lemon wedges.
