1. Soak the Beans
Rinse the navy beans and soak them overnight in a large bowl of water.
2. Cook Bacon
In a large pot, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving the fat in the pot.
3. Sauté Vegetables
In the same pot with the bacon fat, add diced onions and carrots. Sauté until they are soft, about 5-7 minutes. Add minced garlic and cook for an additional minute.
4. Combine Ingredients
Drain the soaked navy beans and add them to the pot along with the cooked bacon, cured ham, vegetable broth, bay leaf, salt, and black pepper.
5. Simmer
Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1 to 1.5 hours, or until the beans are tender.
6. Serve
Remove the bay leaf, adjust seasoning if necessary, and serve hot.
