    Prepare the Base

    In a large pot, melt the butter over medium heat. Add the onion, celery, and carrot, and sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Tomato Paste

    Stir in the minced garlic and tomato paste, cooking for another 2 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes until reduced slightly.

    Incorporate Stock

    Add the seafood stock, bay leaf, and fresh thyme. Bring the mixture to a boil, then reduce to a simmer for 15 minutes.

    Blend and Strain

    Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can blend in batches in a regular blender. Strain through a fine mesh sieve for an ultra-smooth texture.

    Finish with Cream and Lobster

    Return the soup to the pot over low heat. Stir in the heavy cream and chopped lobster meat. Season with salt and black pepper to taste. Heat through for about 5 minutes.

    Ladle the bisque into bowls and garnish with additional lobster meat or fresh thyme if desired. Enjoy!
