Add Vinegar
Once the milk is heated, remove it from the heat and add the white vinegar. Stir gently for a minute until curds begin to form.

Strain the Curds
Let the mixture sit for 5-10 minutes. Then, use a fine-mesh strainer lined with cheesecloth to strain the curds from the whey.

Rinse the Curds
Rinse the curds under cold water to remove any excess vinegar and whey. Squeeze the cheesecloth to eliminate as much liquid as possible.

Add Salt and Herbs
Transfer the curds to a bowl and mix in the salt and optional herbs if using. Taste and adjust seasoning as desired.

Press the curds into a mold or form them into small balls. Allow the cheese to sit at room temperature for 1-2 hours to firm up.
