Cooking Directions

  1. 1

    Prepare the Milk

In a large pot, heat the whole milk over medium heat until it reaches about 190°F (88°C). Stir occasionally to prevent scorching.

  2. 2

    Add Vinegar

Once the milk is heated, remove it from the heat and add the white vinegar. Stir gently for a minute until curds begin to form.

  3. 3

    Strain the Curds

Let the mixture sit for 5-10 minutes. Then, use a fine-mesh strainer lined with cheesecloth to strain the curds from the whey.

  4. 4

    Rinse the Curds

Rinse the curds under cold water to remove any excess vinegar and whey. Squeeze the cheesecloth to eliminate as much liquid as possible.

  5. 5

    Add Salt and Herbs

Transfer the curds to a bowl and mix in the salt and optional herbs if using. Taste and adjust seasoning as desired.

  6. 6

    Mold the Cheese

Press the curds into a mold or form them into small balls. Allow the cheese to sit at room temperature for 1-2 hours to firm up.

  7. 7

    Chill and Serve

Refrigerate the cheese for at least 2 hours before serving. Enjoy your squeaky cheese as a snack or in salads!
