    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Deglaze the Pot

    Once the onions are caramelized, add the white wine to deglaze the pot, scraping up any brown bits. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette and toast the slices until golden brown.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, place a slice of toasted baguette on top of each bowl, and sprinkle with shredded Gruyère cheese.
