    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pierce each potato several times with a fork. Place them on a baking sheet.

    Bake the Potatoes

    Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Allow them to cool slightly.

    Scoop and Season

    Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides with olive oil and season with salt and pepper.

    Bake the Skins

    Place the potato skins, cut side up, back on the baking sheet and bake for an additional 15-20 minutes until they are crispy.

    Add Toppings

    Remove the skins from the oven, sprinkle the shredded cheddar cheese and cooked bacon on top of each skin. Return to the oven for another 5-10 minutes, until the cheese is melted.

    Serve

    Remove from the oven and top with sliced green onions. Serve warm with a side of sour cream for dipping.
