    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water, then dry them thoroughly. Prick each potato with a fork a few times, then rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

    Cool and Cut

    Remove the potatoes from the oven and let them cool for about 10 minutes. Once cool enough to handle, cut each potato in half lengthwise. Scoop out a portion of the flesh, leaving about 1/4 inch of potato in the skin.

    Add Toppings

    Brush the insides of the potato skins with olive oil and sprinkle with salt. Place them on a baking sheet, cut side up. Fill each skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.

    Bake Again

    Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Remove from the oven and let cool slightly. Serve warm with a dollop of sour cream on top.
