Prepare the vegetables
Wash and trim the green beans, cutting them in half if they are long. Slice the red and yellow bell peppers into thin strips.

Heat the oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté the vegetables
Add the green beans and bell peppers to the skillet. Stir-fry for about 3-4 minutes or until the vegetables are tender-crisp.

Add the curry paste
Add the red curry paste to the skillet and stir well to coat the vegetables. Cook for an additional 2 minutes.

Season the dish
Pour in the soy sauce, add sugar, and season with salt to taste. Stir to combine all ingredients thoroughly.

Add crushed peanuts
Sprinkle the crushed peanuts over the stir-fried mixture and toss gently to distribute.

Transfer the Pad Prik Khing to serving plates. Garnish with fresh basil leaves and lime wedges. Serve immediately.
