Preparation

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and season with salt and pepper. Set aside.

    Prepare the Vegetables

    Slice the onion and bell pepper into thin strips. Set aside.

    Mix the Sauce

    In a small bowl, combine soy sauce, brown sugar, cornstarch, minced garlic, minced ginger, and red pepper flakes. Stir well to create a smooth sauce.

Cooking

    Cook the Chicken

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add the onion and bell pepper. Stir-fry for about 3-4 minutes until they are tender but still crisp.

    Combine Ingredients

    Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens.

    Stir in the cashew nuts and cook for another minute until they are heated through.

Serving
