1. Preparation
Begin by properly defrosting all the exotic meats in the refrigerator overnight if frozen. Pat them dry with paper towels.
2. Marinade
In a large bowl, combine olive oil, garlic, rosemary, salt, and black pepper. Add each type of meat to the marinade and let sit for at least 1 hour.
3. Cooking Bison and Wild Boar
Heat a grill or cast-iron skillet over medium-high heat. Cook the bison steak for about 4-5 minutes per side for medium-rare. For the wild boar chops, cook for about 6-7 minutes per side until well browned.
4. Cooking Ostrich and Kangaroo
Reduce the heat to medium. Cook the ostrich fillet for about 6-7 minutes per side, and the kangaroo steak for about 4 minutes per side.
5. Cooking Alligator and Python
In a separate pan, heat some olive oil over medium heat. Cook the alligator meat for 5-6 minutes until golden brown. For the python meat, cook for about 3-4 minutes until fully cooked through.
6. Rest and Serve
Once cooked, let all the meats rest for about 5 minutes before slicing. Serve on a large platter, allowing guests to sample each exotic meat.
