Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to create fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Dry the Fries
After soaking, drain the fries and pat them dry with a kitchen towel.

Season the Fries
In a large bowl, toss the dried fries with salt, black pepper, and half of the truffle oil until evenly coated.

Bake the Fries
Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for about 25-30 minutes, flipping halfway through, until golden and crispy.

Finish with Truffle Oil and Parmesan
Once the fries are done, remove them from the oven and drizzle with the remaining truffle oil. Immediately toss with shaved Parmesan cheese and chopped parsley if using, ensuring the cheese adheres to the fries.

Serve the truffle fries hot, garnished with additional Parmesan and parsley if desired.
