Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened.

Add Cheese and Cream
Once the grits are cooked, stir in the butter, smoked gouda, and heavy cream. Mix well until the cheese is melted and the mixture is creamy. Season with salt and pepper to taste.

Cook the Shrimp
In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes on each side until the shrimp is pink and opaque.

Serve
To serve, spoon the cheesy grits onto a plate and top with the pan-seared shrimp. Drizzle with any pan juices and garnish with sliced green onions.
