Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Cook the Pancetta
In a large skillet, over medium heat, cook the pancetta until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Sauce
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper.

Combine Everything
Add the hot drained spaghetti to the skillet with pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing continuously until the sauce thickens and coats the spaghetti. If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.

Serve
Serve immediately with extra Parmesan cheese and black pepper on top.
