Preparation Directions
1. Cook the Pasta
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
2. Prepare Pancetta
In a large skillet over medium heat, add the pancetta or guanciale and cook until crispy, about 5-7 minutes. Remove from heat.
3. Mix Egg and Cheese
In a bowl, whisk together the eggs, ricotta cheese, Parmesan cheese, lemon zest, salt, and black pepper until smooth.
4. Combine Ingredients
Add the hot spaghetti to the skillet with pancetta. Remove from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
5. Serve
Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve immediately.
