    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

    Combine Gelatin and Cream Mixture

    Remove the saucepan from heat. Stir in the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours, or until set.

    Prepare Berry Sauce

    While the panna cotta is setting, prepare the berry sauce by blending fresh berries (like strawberries, blueberries, or raspberries) with a little sugar and water until smooth. Strain if desired to remove seeds.

    Serve

    Once the panna cotta has set, carefully unmold or serve directly from the cups. Top with the berry sauce before serving.
