Gelato Preparation

    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture begins to simmer, stirring occasionally.

    Mix Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks and remaining sugar until the mixture is pale and thick.

    Temper the Eggs

    Slowly pour about a cup of the hot milk mixture into the egg yolk mixture while whisking constantly. This will temper the eggs and prevent them from scrambling.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Chill the Mixture

    Remove from heat, stir in the vanilla extract and salt. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours, preferably overnight.

    Churn the Gelato

    Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze and Serve

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving. Enjoy your homemade gelato!
