Prepare the Focaccia Croutons
Preheat the oven to 180°C (350°F). Cut the focaccia into small cubes. Toss them with olive oil, salt, and pepper. Spread on a baking sheet and bake for 10-12 minutes or until golden brown and crispy.

Prepare the Salad
Wash and dry the romaine lettuce. Tear it into bite-sized pieces and place it in a large salad bowl.

Make the Caesar Dressing
In a bowl, combine the following: 1 egg yolk, 2 teaspoons of Dijon mustard, 2 teaspoons of Worcestershire sauce, 2 cloves of minced garlic, 1 tablespoon of lemon juice, and 100 ml of olive oil. Whisk until smooth. Add salt and pepper to taste.

Assemble the Salad
Add the crispy guanciale and focaccia croutons to the romaine lettuce. Drizzle with the Caesar dressing and toss gently to combine. Shave the Parmigiano Reggiano on top before serving.
