Prepare the Bacon

In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

Cook the Vegetables

In the same skillet, add the butter. Once melted, add the sliced mushrooms and sauté for about 5 minutes until they are soft. Add the spinach and cook for another 2-3 minutes until wilted.

Scramble the Eggs

In a bowl, whisk the eggs together with salt and pepper. Pour the eggs into the skillet with the vegetables and allow them to cook for a minute before gently stirring. Continue to cook, stirring occasionally, until the eggs are scrambled to your desired doneness.

Add Cheese and Bacon

Once the eggs are nearly cooked, stir in the crumbled bacon and shredded fontina cheese. Cook for an additional minute until the cheese is melted.

Serve
