Preparation Steps
Slow Roast the Beef
Preheat your oven to 325°F (163°C). Season the beef roast generously with salt and black pepper. Place it in a roasting pan and roast for about 3 hours or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Let it rest for 20 minutes before slicing.
Prepare Sandwiches
Spread horseradish sauce on one side of each slice of sourdough bread. Layer the sliced roast beef, sautéed onions, bell peppers, and gruyere cheese on half of the bread slices. Top with the other half of the bread.
Make Au-Jus
In a saucepan, heat the beef broth over medium heat until warmed through. Serve alongside the sandwiches for dipping.
