Prepare Hash Browns

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the frozen hash browns and spread them evenly in the skillet. Season with salt and black pepper. Cook for about 5-7 minutes until they start to turn golden brown.

Add Vegetables and Ham

Add the diced onion, bell pepper, and ham to the skillet. Stir well and continue to cook for an additional 5-7 minutes until the vegetables are tender and the hash browns are crispy.

Add Cheese

Sprinkle the shredded cheddar cheese over the top of the hash browns. Cover the skillet and allow the cheese to melt for about 2-3 minutes.

Cook the Eggs

In a separate non-stick skillet, melt the remaining 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes.

Assemble the Dish

Once the cheese has melted, remove the skillet from heat. Serve the loaded hash browns on a plate, topped with the sunny-side-up eggs. Toast the bread and serve it on the side.
