Prepare the Chicken
Preheat the grill to medium-high heat. Brush the chicken breasts with olive oil, and season both sides with salt and black pepper.

Grill the Chicken
Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes.

Melt the Cheese
During the last few minutes of grilling, place a slice of pepper jack cheese on each chicken breast to melt.

Assemble the Sandwich
Slice the sandwich rolls in half. Spread chipotle aioli on the bottom half, followed by a generous layer of guacamole. Place the grilled chicken with melted cheese on top and close the sandwich.

Serve the grilled chicken sandwich warm with your choice of sides.
