Make the Tortilla Chips

Cut the corn tortillas into triangles and heat the cooking oil in a large skillet over medium heat. Fry the tortilla pieces until golden and crispy, about 3-4 minutes. Remove and drain on paper towels. Sprinkle with salt while still warm.

Prepare the Chilaquiles

In a separate large pan, heat the tomatillo sauce over medium heat. Add the fried tortilla chips and gently toss to coat them with the sauce. Cook for about 2-3 minutes until the chips are heated through.

Add Toppings

Once the tortilla chips are coated, sprinkle the pico de gallo and mozzarella cheese on top. Cover the pan and let it cook for an additional 2 minutes until the cheese melts.

Cook the Eggs

In another skillet, cook the eggs over medium heat to your desired doneness. Over medium is recommended for a runny yolk.

Serve

Divide the chilaquiles onto plates. Top each serving with a cooked egg, a dollop of sour cream, and serve with black beans on the side.
