Prep the Ingredients

Chop the bell pepper and scallions, and dice the ham. Shred the cheddar cheese.

Beat the Eggs

In a bowl, crack the eggs, add salt and black pepper, and whisk until well combined.

Cook the Omelet

In a non-stick skillet, melt the butter over medium heat. Add the diced ham, bell peppers, and scallions, and sauté for 2-3 minutes until softened.

Add Eggs

Pour the beaten eggs over the sautéed ingredients. Allow it to cook for about 2-3 minutes until the edges start to set.

Add Cheese

Sprinkle the shredded cheddar cheese over one half of the omelet. Once the eggs are mostly set, gently fold the other half over the cheese.

Finish Cooking

Cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.

Serve

Slide the omelet onto a plate and serve hot, garnished with extra scallions if desired.
