    Prepare the Veal

    Season the veal with salt and black pepper. Heat olive oil in a large pot over medium-high heat and sear the veal on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, minced garlic, sliced carrot, and chopped celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Deglaze with Port Wine

    Pour in the Port wine, scraping the bottom of the pot to deglaze. Bring to a simmer and let it reduce by half.

    Add Stock and Herbs

    Return the veal to the pot, add the beef or vegetable stock, bay leaves, and thyme. Bring to a boil, then reduce the heat to low.

    Slow Cook

    Cover the pot and let the veal simmer for about 2 to 2.5 hours, or until tender, stirring occasionally.

    Serve

    Remove the veal from the pot and let it rest for a few minutes before slicing. Serve with the sauce and vegetables over mashed potatoes or polenta.
