Sushi Preparation Steps

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low and cover. Cook for about 20 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature.

Assemble the Sushi
Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep it tight. Roll until the edge of the nori seals the roll. Use a sharp knife to slice the roll into bite-sized pieces.

Serve
Serve the sushi with soy sauce, wasabi, and pickled ginger on the side.
