1. Prepare the Vegetables

In a large bowl, toss the mixed vegetables with olive oil, salt, and black pepper. Set aside.

2. Grill the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and lemon juice, then sprinkle with minced garlic, salt, and black pepper. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky.

3. Cook the Vegetables

While the salmon is grilling, place the tossed vegetables on the grill. Cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

4. Make the Mashed Potatoes and Carrots

In a large pot, bring water to a boil and add the cubed potatoes and diced carrots. Cook until both are fork-tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt to taste.

5. Serve
