Cheese Preparation

    Heat the Milk

    In a large pot, pour the whole milk and heat over medium heat, stirring occasionally to prevent scorching. Heat until it reaches about 85°C (185°F).

    Add Vinegar

    Once the milk is heated, remove it from the heat and slowly add the white vinegar while stirring gently. You should see the curds start to separate from the whey.

    Let Curds Settle

    Allow the mixture to sit for about 10-15 minutes to let the curds fully separate.

    Strain the Curds

    Using a cheesecloth or fine mesh strainer, pour the curds and whey mixture and let the whey drain off. Rinse the curds under cold water to remove excess vinegar.

    Season and Mold

    Transfer the curds to a bowl, add salt and fresh herbs, and mix gently. Then, pack the mixture into a cheese mold or a small container to shape it.

    Press and Chill

    Place a weight on top of the cheese to press it down and help it firm up. Refrigerate for at least 4 hours or overnight.

    Serve

    Once set, remove from the mold, slice, and serve with bread, olives, or as part of a cheese platter.
