    Heat the Milk

    In a large pot, gently heat the whole milk over medium heat until it reaches about 85°C (185°F). Stir occasionally to prevent it from scorching.

    Add Vinegar

    Once the milk is heated, remove it from the heat and slowly add the white vinegar. Stir gently for a minute until the milk curdles and separates into curds and whey.

    Strain the Curds

    Line a colander with cheesecloth or a clean kitchen towel. Pour the curds and whey into the lined colander. Let it drain for about 10-15 minutes.

    Season the Curds

    After draining, transfer the curds to a bowl. Add salt and finely chopped fresh herbs. Mix gently to combine.

    Shape the Cheese

    Using your hands, shape small portions of the curds into bite-sized balls or discs. Place them on a plate.

    Refrigerate

    Cover the cheese with plastic wrap and refrigerate for at least 1 hour to firm up before serving.
