    Prepare the Dough

    In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Filling

    While the dough is rising, chop the chouriço sausage and cheese (if using) into small pieces.

    Shape the Bread

    Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle. Spread the chouriço and cheese evenly over the dough.

    Roll and Second Rise

    Roll the dough tightly into a log, place it seam-side down in a greased loaf pan, and let it rise again for about 30 minutes.

    Preheat and Bake

    Preheat the oven to 375°F (190°C). Bake the bread for 30-35 minutes until golden brown and sounds hollow when tapped.

    Let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
