Fried Small Sardines

Frying Procedure

Prepare the Sardines
Rinse the cleaned sardines under cold water and pat them dry with paper towels.

Season the Coating
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

Coat the Sardines
Dredge each sardine in the flour mixture until evenly coated.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 180°C (350°F).

Fry the Sardines
Carefully add the coated sardines to the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried sardines with a slotted spoon and drain on paper towels. Serve hot with lemon wedges.
