Cooking Instructions
1. Prepare the Base
In a large paella pan or skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté for about 5 minutes until the vegetables are soft.
2. Add Rice and Broth
Stir in the Bomba rice, paprika, and saffron. Cook for 2 minutes, then add the chicken broth. Bring to a boil, then reduce the heat to a simmer.
3. Cook the Seafood
Once the rice is partially cooked (about 10 minutes), add the shrimp, mussels, and calamari. Stir gently to combine. Continue to cook for another 10-15 minutes until the seafood is cooked and the rice has absorbed the liquid.
4. Season and Garnish
Season with salt and black pepper to taste. Remove from heat and let it sit for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
