    Prepare the Marinade

    In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice to create a marinade.

    Marinate the Pork

    Rub the marinade all over the pork loin, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Vegetables

    Chop your vegetables into equal-sized pieces and place them in a roasting pan. Drizzle with olive oil and season with salt and pepper.

    Roast the Pork and Vegetables

    Place the marinated pork loin on top of the vegetables in the roasting pan. Roast in the preheated oven for about 25-30 minutes per 500g, or until the internal temperature reaches 70°C (160°F).

    Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. Serve with the roasted vegetables.
