Cooking Directions

  1. 1

    Prepare the Marinade

In a bowl, combine minced garlic, salt, black pepper, paprika, olive oil, white wine, and bay leaves to create a marinade.

  2. 2

    Marinate the Pig

Rub the marinade all over the suckling pig, ensuring it gets into all the crevices. Cover and refrigerate for at least 12 hours, preferably overnight.

  3. 3

    Preheat the Oven

Preheat your oven to 250°C (482°F).

  4. 4

    Prepare the Roasting Pan

Place the suckling pig in a large roasting pan. Melt the pork lard and pour it over the pig.

  5. 5

    Roast the Pig

Roast the pig in the preheated oven for about 2 to 3 hours, basting occasionally with the pan juices. The skin should become crispy and golden.

  6. 6

    Check for Doneness

Ensure the internal temperature of the pig reaches at least 70°C (158°F).

  7. 7

    Rest and Serve

Once done, remove the pig from the oven and let it rest for about 30 minutes before carving and serving.
