Prepare the Tempura Batter

In a mixing bowl, combine the tempura flour and salt. Gradually add the ice cold water to the flour, mixing gently with chopsticks or a fork until just combined. Do not overmix; small lumps are okay.

Prepare the shrimp and vegetables by ensuring they are clean and cut into appropriate sizes for frying.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil temperature by dropping a small amount of batter into it; if it sizzles and floats to the surface, it's ready.

Fry the Tempura

Dip each piece of shrimp and vegetable into the batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden and crispy. Use a slotted spoon to remove them and drain on paper towels.

Serve the tempura hot with a dipping sauce, such as tentsuyu (a soy-based sauce), and enjoy!
