Prepare the Glass
Chill a rocks glass by filling it with ice water and setting it aside.

Mix the Cocktail
In a mixing glass, combine the Sazerac Rye, simple syrup, and Peychaud's bitters. Fill the mixing glass with ice and stir well until chilled.

Prepare the Glass with Absinthe
Empty the ice water from the chilled glass and add the absinthe. Swirl the absinthe around to coat the inside of the glass, then discard the excess.

Strain and Serve
Strain the chilled cocktail mixture into the prepared glass. Express the lemon peel over the drink to release the oils, then drop it into the glass as a garnish.
