Prepare the Chicken
In a large bowl, mix the buttermilk, eggs, salt, black pepper, garlic powder, and paprika. Add the chicken thighs to the mixture and marinate for at least 1 hour, or overnight for best results.
Dredge the Chicken
In another bowl, place the all-purpose flour. Remove the chicken from the marinade, allowing excess to drip off, then dredge each piece in the flour, coating thoroughly.
Fry the Chicken
Heat the vegetable oil in a deep skillet or frying pan over medium-high heat. Once hot, fry the chicken thighs in batches for about 6-8 minutes per side, or until they are golden brown and cooked through. Remove and place on a wire rack to drain excess oil.
Prepare the Sauce
In a small bowl, mix the hot sauce and kewpie mayo until well combined.
Assemble the Dish
On a serving plate, layer the lettuce, then place the fried chicken thighs on top. Drizzle with the hot sauce and mayo mixture and add pickles on the side.
