Prepare the Salmon

Preheat your wood oven to 400°F (200°C). In a bowl, mix olive oil, lemon juice, salt, pepper, and chopped herbs. Brush this mixture over the Ōra King salmon fillets.

Roast the Salmon

Place the salmon fillets in the wood oven on a baking tray and roast for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Cook the Vegetables

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until translucent. Add the eggplant, zucchini, bell pepper, and tomato. Season with salt and pepper.

Simmer

Reduce heat to low, cover, and let simmer for about 20-25 minutes, stirring occasionally, until the vegetables are tender. Stir in fresh basil before serving.
