Prepare the Gizzards
Clean the chicken gizzards thoroughly under cold running water. Remove any excess fat and connective tissue. Pat dry with paper towels.
Make the Breading
In a bowl, mix together the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
Coat the Gizzards
Dip each gizzard first into the wet mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated. Set aside on a plate.
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Gizzards
Carefully add the coated gizzards to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown and cooked through.
Drain and Serve
Remove the fried gizzards from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot.
