Make the Pretzel Dough

In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy. Add salt and flour gradually until a dough forms. Knead the dough for about 5 minutes until smooth.

Let the Dough Rise

Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour or until doubled in size.

Shape the Pretzel

Preheat the oven to 450°F (230°C). Once risen, punch down the dough and shape it into a large pretzel. Place on a greased baking sheet.

Prepare the Baking Soda Bath

In a large pot, bring 10 cups of water to a boil. Stir in baking soda. Carefully dip the pretzel into the boiling solution for 30 seconds, then remove and place back on the baking sheet.

Bake the Pretzel

Brush the pretzel with the beaten egg and sprinkle coarse salt on top. Bake for 12-15 minutes until golden brown.

Make the Cheese Sauce

In a saucepan, melt butter over medium heat. Whisk in flour, cook for 1 minute. Gradually add milk, stirring constantly until thickened. Add cheeses, garlic powder, and black pepper. Stir until melted and smooth.

Prepare the Dipping Sauces

In a small bowl, mix melted butter with cinnamon for the cinnamon butter. Have yellow mustard ready for dipping.
