Pickling Ingredients

Method

Pickling Process

  1. 1

    Prepare the Daikon

Peel the daikon radish and cut it into thin strips or matchsticks.

  2. 2

    Salting the Radish

In a bowl, mix the daikon strips with salt and let them sit for about 30 minutes. This will draw out excess moisture.

  3. 3

    Make the Pickling Brine

In a saucepan, combine rice vinegar, sugar, turmeric powder, red chili flakes, and water. Heat over medium heat until the sugar dissolves completely.

  4. 4

    Combine Radish and Brine

After 30 minutes, rinse the daikon strips under cold water to remove excess salt. Drain well and pack them into a clean jar.

  5. 5

    Pour the Brine

Pour the warm pickling brine over the daikon strips, ensuring they are fully submerged.

  6. 6

    Seal and Refrigerate

Seal the jar with a lid and refrigerate. Allow the takuan to pickle for at least 24 hours before consuming for the best flavor.
