Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot and cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until tender. Let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice. Allow the rice to cool to room temperature.

Prepare Fillings
Slice the avocado and fresh salmon or tuna into thin strips.

Assemble the Roll
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, and take a handful of sushi rice (about 1/2 cup) and spread it evenly over the nori, leaving a small margin at the top. Lay the slices of avocado and salmon or tuna in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, gently roll the nori away from you, applying slight pressure to form a tight roll. Seal the edge with a little water. Repeat with the second nori sheet and remaining ingredients.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with soy sauce and wasabi on the side.
