Prepare the sushi rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer rice to a bowl and let it cool slightly.

Season the rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm sushi rice and gently fold it in using a spatula. Allow the rice to cool to room temperature.

Prepare the fillings
Slice the avocado into thin strips. If using long kani, shred or cut it into strips for easy rolling.

Assemble the roll
Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread it evenly over the nori, leaving about an inch at the top edge. Place a line of cream cheese, long kani, and avocado in the center of the rice.

Roll the sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling away from you, pressing gently to form a tight roll. Roll until you reach the bare edge of the nori. Wet the edge with a bit of water to seal the roll.

Slice and serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top of the rolls before serving. Enjoy your Philly Roll!
