    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer on low heat for 20 minutes. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice without mashing the grains. Allow the rice to cool to room temperature.

    Prepare the Fish

    Slice the fresh tuna and salmon fillets into thin pieces, about 1/4 inch thick. If using nori, cut it into strips.

    Form the Nigiri

    Wet your hands with a little water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and shape it into an oval. Press a slice of tuna or salmon on top of the rice. Repeat this process for the remaining fish and rice.

    Serve

    Arrange the nigiri on a platter. Serve with wasabi and soy sauce on the side. Enjoy your fresh nigiri sushi!
